I’m back! It’s been over a week since I did a post but feels much, much longer. Life is busy! I feel like I’m barely functioning. That’s why I’m sharing this quick and easy breakfast – cottage cheese with tomatoes and pepitas. It’s one of the easiest, most delicious breakfasts. We’ve been out of town the last three weekends. It’s crazy how much work it takes to get ready to go out of town for a weekend and then crazy how much work it takes to recover from a weekend of fun. We were backpacking in the Seven Devils, went to Sun Valley for our third anniversary, and rafted the Lower Salmon River for three nights last weekend. I’m just now getting caught up on laundry and the house cleaned. Although I’m still not done with laundry and the house still feels like it’s a mess….
I also started a Cross Fit 101 class three times a week, which is totally out my element. My usual exercise routine consists of home workouts in the basement doing Jillian Michaels videos or YouTube workouts from Melissa Bender, BodyRock, and Tone It Up. Recently, I just finished up the Bikini Body Guide from Kayla Itsines and before that was doing the Bikini Body Workouts from Jen Ferruggia. (Highly recommend all those home workout, by the way!).
Working out at home is convenient and it doesn’t matter if my workout clothes match, which is why I like it so much. I told Kris I would have to buy new workout clothes if I was going to start a Cross Fit 101 class! Kris has been going to Cross Fit since last Spring and he really enjoys it. Cross Fit intimidates me though, actually it scares me. Lifting weights is something I’ve never before, but I like the way the 101 class approaches lifting. With only four or five girls at each class we’re practically getting one on one training where we go through all the moves really slow and work on form. It’s fun and the Cross Fit box is only a few miles away from our house, which is really nice…except on the days I have to go straight from work.
It’s good to try new things and challenge yourself, but I tend to get stuck in my comfort zone far too often. I’ve been working on trying new things and pushing myself to do better, follow my dreams. Sounds idealistic, I know, but I want a more flexible schedule. Having this blog is one of those things. Getting in crazy good shape at Cross Fit is my next plan, haha – joking, but it might happen…. Actually, for real, stay tuned for more exciting projects in the next few weeks!
So back to this cottage cheese with tomatoes and pepitas breakfast. Since my schedule has been so busy with recovering from our weekend adventures and Cross Fit 101 class, I haven’t been functioning enough to make myself eggs for breakfast and Kris had to go out of town for work, so cottage cheese with tomatoes and pepitas it is! At least as long as the garden keeps giving me tomatoes.

- 1/2 cup of cottage cheese Daisy Cottage Cheese 4% is my favorite
- 1/4 cup of sliced tomatoes
- 2 tbsp of pepitas
- 1 tbsp of olive oil
- Black pepper to taste

Place all ingredients in a bowl.
