Okay, so technically, lemon bars aren’t cookies, but in my mind, they’re a close second. Bars are practically on the same level of cookie deliciousness, and thus are categorized as part of my cookie addiction. Kris does not particualarly like lemon flavored foods, especially lemon flavored desserts… a case of an overly lemon-zested green bean casserole years ago left him scarred. So all the lemon desserts are MINE! And, honestly, I will generally choose a chocolate flavored dessert over a lemon one, like 95% of the time. But apparently, these lemon bars are my exception to chocolate, and they are delicious enough that I felt the need to share them. …
Favorite Christmas Sugar Cookies
This is the only time of year that I give myself permission to guiltlessly stuff my face with cookies. I have been working on eating less sugar overall but a day or two before Christmas I let myself indulge. Actually, it’s normally a week or two before Christmas…limiting my splurge to just a few days this year. Cookies are my downfall, my weakness, my Achilles heel, and since I can’t resist them, well, “know thy weaknesses”. I can fairly easily bypass cakes, cupcakes, store-bought cookies, and candy (except dark chocolate), but with cookies, there’s no “just say no” and walking away for me. So around this time of year, I embrace my love of cookies, especially sugar cookies, and spend an extra 30 minutes at the gym.
Dark Chocolate Coconut Almond Clusters
Finally time for some Christmas treats. This is the only time of year that I let myself over indulge in treats. I love Christmas cookies and goodies. And it’s not just a casual love affair, if I’m being honest…. It’s a full on, crazy in love, addiction to Christmas treats. I have a problem. In order to keep myself in-check this year, I made these dark chocolate coconut almond clusters. No added sugar, just 85% dark chocolate with unsweetened coconut flakes, raw almonds, and a sprinkle of sea salt. Pure indulgence.
