I’m always trying to get people to eat more vegetables. Sometimes I feel like it’s my number one mission in life as a dietitian. We often make eating too complicated, too many rules. I like to keep things simple and my top recommendation for healthy eating is to eat vegetables and protein. Vegetables taste much better with a little bit of fat and salt. In fact, I prepare most of my vegetables this way. Garlic parmesan roasted broccoli is one of my favorite vegetable side dishes.
