This is by far one of my best creations. I had the idea in my head to make a peanut butter and jelly chocolate ice cream but was a little worried it wouldn’t turn out quite right. Well, I have to say I was more than happy with the end result and even impressed myself a little bit with how delicious it is. The Chocolate Killer Whey! protein ice cream tastes amazing with peanut butter sauce and chia seed jam.

Weekends are for lazy mornings and breakfast hashes. I like to sleep-in at least one day on the weekend, just wake up on my own, no alarm. And then I drink coffee and read while Kris cooks me breakfast (haha, okay, not always, but sometimes it works out this way 🙂 ). Kris is better at making breakfast than me, so I can usually sweet talk him into making something amazing. Lately he’s been making breakfast hashes. And this sweet potato hash has been my favorite, so I thought I’d share.

If you’ve been following me for a while, you’ll know that I eat a lot of salads. And you’ll know that Kris hates my “everything in the fridge goes” types of salads. I’m much more successful when I make a specific type of salad instead of just tossing in all, and any available, vegetables. Inspiration for this Simple Greek Chicken Salad again comes from the hospital cafeteria where I work. Seriously, they are just rocking it!
