It almost sounds like an oxymoron, doesn’t it? Low Carb Chocolate Chip Cookies. How can low carb, chocolate, and cookies all be in the same sentence, let alone the same recipe? Normally, I lean more on the side of “just eat a real cookie” but sometimes I want a cookie that won’t totally derail healthy eating.
I spent quite a bit of time going through paleo, low carb, and keto cookie recipes online. I can be a little picky when it comes to cookies, which basically means that I prefer buttery, flakey cookies. And I stay away from the cakey ones. The “healthy” cookie recipes I found online are all over the place with anything from almond flour to coconut flour to no flour. And sweeteners varied from coconut sugar to agave nectar to maple syrup to erythritol and xylitol.
I’ve been experimenting with the sugar alcohols recently, xylitol and erythritol. I had shied away from them for the simple reason that they can cause “gastrointestinal distress”. Which sounds awful but for most people, you’d have to consume a lot of sugar alcohols to have problems, a lot. A high consumption of sugar alcohols will cause gas, bloating, and in some cases diarrhea. Yikes! But sugar alcohols are not sugar or alcohol. They are a sweet tasting carbohydrate derived from plants that your body cannot fully digest. I found a great article by Authority Nutrition on sugar alcohols and they recommend using erythritol, which seems to be the least likely to cause GI distress and has the least amount of calories. So the whole point of using sugar alcohols is to avoid raising blood sugar and insulin levels.
Now for these cookies! I ended up liking these Keto Protein Chocolate Chip Cookies from Life of Pie and this recipe for Low Carb Chocolate Chip Cookies from RuledMe the best. And so I combined them and ended up with a low carb protein chocolate chip cookie recipe that will satisfy my sweet tooth.
Okay, now don’t get me wrong, I still eat regular, sugary chocolate chip cookies. In fact, one of my favorite recipes is Pinch of Yum’s recipe for The Best Soft Chocolate Chip Cookies, and I love the recipe because it only makes about a dozen. Because you see, I can eat an entire batch of homemade cookies without hesitation and then hate myself, haha, because I have no self-control for cookies. So to keep myself in-check, I don’t bake very often. And when I do, I try to stick with somewhat healthier recipes. To each his own, I guess. - 2 cups of almond flour
- 3 tbsp butter
- 3 tbsp whey protein powder
- 1/3 cup + 1 tbsp erythritol
- 2 tsp vanilla
- 1 egg + 1 egg yolk
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1.5 ounces of sugar free chocolate 1/2 a chocolate bar, chopped

Preheat oven to 350 degrees.

In an electric mixer, beat butter, egg, egg yolk, and erythritol until well combined.

Add in whey protein powder, vanilla, baking soda, and salt.

Next mix in almond flour.

Finally, add in chocolate.

Line a baking sheet with parchment paper.

Scoop cookie dough onto cookie sheet using a large spoon, about 2 -3 tbsp. Flatten cookie dough prior to baking. The cookies will not spread out very much.

Bake cookies for 15-16 minutes, until lightly brown.

Let cool on cookie sheet.
Net carbs = 2.6 g
