Red, White, and Blue Faux Potato Salad

I know I’m posting a Memorial Day recipe a day late. Couldn’t be helped. We went to McCall for the weekend, came back last night, and then I had to work. I did actually think about getting this post ready before we left but I got busy and ran out of time….thinking about it is as far as I got. Luckily this red, white, and blue faux potato salad is perfect for all those upcoming summer barbecues! The secret (if you couldn’t already tell…), is that it’s a cauliflower potato salad with blue cheese and red onions! Yay!

Steak and Potato Salad

This is the salad of all salads, a true “man-salad”, you could say. Steak, potatoes, onions, and tomatoes grilled to perfection on the BBQ and made into a salad, who does that?!?! It is sooooo delicious though, you have to make it! It is the perfect spring and summer salad to satisfy the whole family, and it will impress a crowd.

Now don’t get me wrong, there’s nothing I love more than a good steak with a side of crispy, roasted potatoes, so why am I turning a classic meal into a steak and potato salad? Well, often people forget to include a side of vegetables. And vegetables should really be the focus of meals. Sometimes I think people are turned off by the thought of eating a salad for dinner…. Steak and potato salad to the rescue!

Peach Green Smoothie

This smoothie is amazing. The recipe is simple, and the color is awesome! I was pleasantly surprised by the beautiful green color of this smoothie. The fresh peaches with the almond milk and yogurt created an orange – sherbety color and then the addition of spinach yielded a vibrant green. I barely edited these photos, promise. You guys can make a spinach peach green smoothie at home that will be this exact same green color. A lot of green smoothies end up being a gross, nasty, pukey, green color, but this smoothie’s natural greenness will impress.
