Another post inspired by my best friend Kendra. She sent me a message with a link to a chimichurri beef roulade and said it’d make a great blog post. And she was right, of course, because beef roulade is delicious and does make a great post. But I decided to nix the chimichurri and go with a sort of jalapeño popper inspired filling. It’s amazing! A few months ago I volunteered to bring a veggie tray with dip to a party, but I was running short on time (imagine that!) and ended up buying a Chobani Greek yogurt dip at the store. Apparently these are a new item from Chobani and only available in a limited market. Maybe we get them in Idaho because there’s a factory in Twin Falls? In any case, the one I got was delicious, the chili lime flavor, a big hit at the party, but let me tell you, it was expensive! Over $5 for a little 10 ounce container! Maybe more expensive because it’s a new product…. Too expensive to be a regular purchase for me, so I decided to make my own Garlic Chili Lime Greek Yogurt Dip.

Cauliflower makes the perfect low-carb substitute for rice and potatoes. Kris and I like to make cauliflower stir-fry and cauliflower mashed potatoes on a regular basis. It’s a great way to keep carbs low and when you incorporate the cauliflower rice into a dish, like stir-fry, you can hardly tell that your not eating rice. This cauliflower stir-fry with ground pork is one of our favorite ways to use cauliflower rice.
