Delicious low carb chocolate chip cookies made with almond flour, protein powder, sugar free dark chocolate, and erythritol.

Ingredients
  • 2 cups of almond flour
  • 3 tbsp butter
  • 3 tbsp whey protein powder
  • 1/3 cup + 1 tbsp erythritol
  • 2 tsp vanilla
  • 1 egg + 1 egg yolk
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1.5 ounces of sugar free chocolate 1/2 a chocolate bar, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. In an electric mixer, beat butter, egg, egg yolk, and erythritol until well combined.
  3. Add in whey protein powder, vanilla, baking soda, and salt.
  4. Next mix in almond flour.
  5. Finally, add in chocolate.
  6. Line a baking sheet with parchment paper.
  7. Scoop cookie dough onto cookie sheet using a large spoon, about 2 -3 tbsp. Flatten cookie dough prior to baking. The cookies will not spread out very much.
  8. Bake cookies for 15-16 minutes, until lightly brown.
  9. Let cool on cookie sheet.
