The perfect summer salad combining fresh zoodles, heirloom tomatoes, cucumbers, feta cheese, olive oil, and balsamic vinegar.

Ingredients
  • 2-3 medium zucchini spiralized
  • 4 large heirloom tomatoes of choice any kind of tomatoes will work - I used 2 red, 2 orange
  • 8-10 small/medium cherry heirloom tomatoes any cherry or small tomatoes will work
  • 2 medium cucumbers diced
  • 8 oz Feta Cheese crumbled
  • 1/4 - 1/3 cup Olive Oil
  • 1/4 - 1/3 cup Balsamic Vinegar
  • 1 tsp Salt
  • 3/4 tsp Pepper
Instructions
  1. Place zoodles, tomatoes, cucumbers, and feta in a large bowl.
  2. Drizzle with olive oil and balsamic vinegar.
  3. Salt and pepper to taste.
  4. Lightly toss to combine.
