Ingredients
  • 1 pound of ground beef
  • 1 medium onion diced
  • 1/4 head of cabbage roughly chopped
  • 2-3 garlic cloves minced
  • 2-3 jalapeƱos sliced
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cayenne peppers
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 cans of diced tomatoes
  • 32 oz beef broth or vegetable broth
  • 1 20 oz bag of lentils
  • Shredded cheddar cheese and sour cream for topping
Instructions
  1. Heat a large stock pot or dutch oven over medium heat.
  2. Brown ground beef, breaking into small pieces
  3. Once ground beef is cooked, add in onions, cabbage, garlic, and jalapeƱos.
  4. Cook until onions are soft, about 5 minutes
  5. Mix in seasonings - chili powder, cumin, red pepper flakes, cayenne pepper, salt, and pepper
  6. Add canned diced tomatoes and broth
  7. Mix in lentils and stir to incorporate all ingredients.
  8. Cover and let simmer for 20-25 minutes or until lentils are cooked.
  9. Top with shredded cheddar cheese, sour cream.
