Ingredients
  • 1 cup white sugar or coconut sugar
  • 1/4 cup brown sugar
  • 4 cups shredded zucchini
  • 3 eggs
  • 2 tsp vanilla extract
  • 3/4 cup plain Greek yogurt
  • 1 cup all-purpose flour
  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp cloves
  • 1 cup coconut sweetened, shredded
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees
  2. Grease 2 bread pans
  3. Mix sugars, eggs, yogurt, vanilla, and zucchini in a large bowl.
  4. In a separate bowl, mix flours, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  5. Add zucchini mixture to flour mixture and stir until just incorporated.
  6. Stir in coconut and chocolate chips.
  7. Pour batter into greased bread pans
  8. Bake for an 1 hr, 15 minutes.
