Healthy Sweet Potato Nachos

Healthy nachos layered with homemade sweet potato chips, seasoned ground beef, fresh onions and peppers, shredded cheddar cheese, sour cream, and salsa.

  • 2-3 medium sweet potatoes yams peeled and sliced into 1/8 inch rounds
  • 2 tbsp Avocado oil/olive oil/coconut oil - your choice. I used avocado.
  • 1-2 tsp salt
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 1 pound of ground beef
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes optional
  • Medium onions diced
  • Green bell pepper diced
  • 1/2 cup - 1 cup of shredded cheddar cheese depending on how cheesy you want your nachos
  • Sour cream for topping
  • Salsa for topping
  • Fresh cilantro for topping
  1. Preheat oven to 375 degrees.
  2. Place sweet potato rounds in a large bowl. Toss with oil, salt, garlic powder, and cumin.
  3. Arrange sweet potato slices on parchment lined baking sheets. I ended up using 3 baking sheets. You may need to cook them in batches.
  4. Bake the sweet potato rounds for 10 minutes, then remove from oven and flip the rounds over.
  5. Next, return the chips to the oven and bake an additional 10 minutes. You might want to check the chips at 5 minutes as any smaller chips might be done baking at this point. Remove any chips that are starting to brown and slightly crispy. Continue baking chips, checking every minute or so until all chips are cooked.
  6. Allow chips to cool. Reduce oven temperature to 350 degrees.
  7. While chips are baking, brown ground beef in a skillet over medium heat. Season with salt, pepper, chili powder, cumin, garlic, and red pepper flakes.
  8. To assemble nachos, arrange half the sweet potato chips on a medium baking sheet. Layer the chips with half the ground beef, half the onion, half the pepper, and half the cheese. Repeat the layer.
  9. Finally, bake at 350 degrees for 5-10 minutes, until cheese is melted. Remove from the oven and top with salsa, sour cream, and cilantro.
