Cracklin' Cauliflower

Roasted cauliflower with Indian seasonings.

Ingredients
  • 1 medium Head of Cauliflower, cut into florets
  • 1 medium Red Onion, chopped
  • 5 tbsp Olive Oil
  • 1 tbsp Curry Powder
  • 1 tbsp Garam Masala
  • 1 1/2 tsp Fennel Seed, whole
  • 1/2 tsp Red Pepper Flakes, Optional
  • 1 1/2 tsp Lemon Pepper
  • 1 tsp Turmeric
  • 1 tbsp Fresh Ginger, peeled and minced
  • 3 cloves Garlic, minced
  • 1/2 tsp Salt
  • 6 tbsp Fresh Cilantro
  • 1/2 cup Green Peas, frozen - defrosted
Instructions
  1. Preheat oven to 325 degrees.

  2. In a large bowl, toss together all ingredients except peas and cilantro.  Mix until cauliflower is well coated with seasonings. 

  3. Place mixture on a baking sheet.

  4. Roast for 25-30 minutes, until cauliflower is crisp and tender, stir cauliflower about every 10 minutes while roasting.

  5. After 25-30 minutes, toss cauliflower with peas and cilantro, bake for another 3-5 minutes to heat peas.

  6. Enjoy!
